Thank you for supporting Rock Springs Market - a small, local, family-run farm that values quality, sustainability, and the beauty of handmade goods

Our love for bees began in 1987, when my husband, Manny, was first introduced to beekeeping. While living on a farm with just a few hives, he quickly became captivated by the colonies and their harmonious way of life. Working alongside the farm’s resident beekeeper, he developed a lasting passion for the art of maintaining a hive.

In 2010, we purchased our first farm just outside of London, Ontario. It was there that Manny established his own apiary and began his journey as a beekeeper. The property featured a beautiful spring-fed pond plus many large boulders and granite rocks we used for landscaping—hence the name Rock Springs.

From our bees, Manny harvests golden, raw wildflower honey that’s unfiltered, unpasteurized, and bursting with natural flavour. A taste of summer in every jar.

From the same hives, we collect pure beeswax, which I use to hand-pour our 100% beeswax candles. These candles are clean-burning, toxin-free, and lightly scented by nature—perfect for creating a warm, cozy glow without chemicals.

Our first farm also had a large sugar bush, where we tapped over 500 trees. Each maple season we collected the sap and had it locally processed into pure, high-quality maple syrup. We’ve maintained our relationship with the same local processor, allowing us to continue offering delicious, locally made syrup to this day.

In 2022, we sold our original farm and relocated—along with our bees—to a beautiful new property just outside Strathroy, Ontario. While our location has changed, our mission remains the same: to create high-quality, natural products that bring comfort, beauty, and a bit of nature into your home.

“Bees are crucial for the survival of mankind, and the beekeepers are crucial for maintaining and caring for the bee population and for collecting the honey and wax.” – Author unknown

HONEY - ONE OF THE PUREST FOODS ON THE PLANET

• Honey has always been highly regarded as medicine to help with everything from sore throats and digestive disorders to skin issues and hay fever.

• Honey has antibacterial, anti-inflammatory and moisturizing properties. It has been historically used as a dressing for wounds, and first aid treatment for burns and cuts. Honey is currently still used to promote wound healing.

• The natural fruit sugars in honey (fructose and glucose) are quickly digested by the body Athletes use honey to give them a natural energy boost.

• Honey lasts an incredibly long time. An explorer found a 2000-year-old jar of honey in an Egyptian tomb and said it tasted delicious.

• Honey has long been used as a beauty treatment due to its ability to attract and retain moisture. It was an essential part of Cleopatra’s beauty ritual.

• Honey is incredibly healthy and includes enzymes, vitamins and minerals. It is the only food that contains ‘pinocembrin’, an antioxidant associated with improving brain function.

• Crystallization of honey can occur naturally and proves the honey is 100% natural. If desired, to re-liquify the honey, it is recommended to place the honey container in hot tap water and stir gently. This preserves the honeys natural nutrients.

• The bees nectar source determines the colour and flavour of the honey. Light honey has a milder flavour and dark honey is stronger in flavour
